- 5 peaches, cut into wedges
- 1 cup fresh raspberries
- 1/2 cup caster sugar
- 1/2 cup cold butter
- 2/3 cup caster sugar
- 1 cup plain flour
- 1 teaspoon baking powder
- 2 teaspoons milk
- 2 tablespoons flaked almonds
- Zest of 1 lemon
- Optional demerara sugar for topping
Instructions
- Preheat oven to 320°F fan or 340°F conventional.
- Slice peaches and combine with raspberries and sugar.
- Transfer fruit mixture to an ovenproof baking dish.
- Mix flour, baking powder, and sugar in a bowl.
- Rub cold butter into dry ingredients until crumbly.
- Add milk and lemon zest to form soft dough.
- Spoon topping over fruit mixture.
- Sprinkle with almonds and optional demerara sugar.
- Bake for 25 to 30 minutes until golden and bubbling.
- Cool slightly before serving.
