- 2 cups old fashioned oats
- 1/4 cup chopped pecans
- 1/4 cup brown sugar or maple syrup
- 1 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1 1/2 cups milk or non-dairy milk
- 1/2 teaspoon vanilla extract
- 1 tablespoon melted butter or vegan butter
- 1 egg or liquid plant egg
- Cooking spray
- 2 ripe peaches thinly sliced
Instructions
- Preheat oven to 375 F.
- Combine oats, pecans, brown sugar or maple syrup, cinnamon and nutmeg.
- Whisk milk, butter, egg and vanilla in a separate bowl.
- Add wet ingredients to dry ingredients and stir.
- Spray an 8×8 baking dish with cooking spray.
- Pour mixture into dish and top with peach slices.
- Bake 20 to 25 minutes until bubbly and lightly browned.
- Serve warm with additional peaches or pecans if desired.
Notes
- Use maple syrup or brown sugar interchangeably.
- Use butter or vegan butter.
- Replace egg with plant egg, flax egg or chia egg for a vegan version.
- Store leftovers in the refrigerator for up to 4 days.
