- 4 ounces butter softened
- 1 cup granulated sugar
- 2 eggs

- 2 peaches sliced into wedges
- 6 ounces blueberries
- 1 teaspoon granulated sugar for topping
Instructions
- Preheat oven to 350°F and grease a 9×3-inch springform pan. Line the bottom with parchment paper and grease again.
- Sift flour, baking powder, and baking soda together in a bowl.
- Beat butter, sugar, and eggs until pale and fluffy.
- Add vanilla and Greek yogurt and mix until creamy.
- Slowly mix dry ingredients into the wet ingredients until combined.
- Spread batter evenly into the prepared pan.
- Arrange peach slices on top and scatter blueberries between them.
- Sprinkle fruit with 1 teaspoon sugar.
- Bake for about 1 hour until golden and a tester comes out clean.
- Cool the cake in the pan for 40 minutes before removing and serving.
Notes
- Do not overmix the batter.
- Use ripe but firm peaches for best texture.
- Store leftovers refrigerated for up to 5 days.
- Serve with whipped cream or vanilla ice cream if desired.
