Description

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 34 ripe peaches, sliced
  • 1/4 cup brown sugar (for topping)
  • 1/2 tsp ground cinnamon

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a separate bowl, cream the butter and granulated sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • Mix in sour cream until smooth. Gradually add the dry ingredients, stirring until just combined.
  • Gently fold in half of the peach slices into the batter.
  • Pour the batter into the prepared pan and arrange the remaining peach slices on top.
  • Sprinkle with brown sugar and cinnamon for a golden, caramelized finish.
  • Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool before serving.

Notes

1️⃣ Use Ripe Peaches: Choose ripe, fragrant peaches for maximum sweetness and juiciness. If using canned peaches, ensure they are well-drained to avoid excess moisture in the batter.

2️⃣ Prevent Peaches from Sinking: Toss peach slices in a little flour before folding them into the batter. This helps keep them evenly distributed throughout the cake.

3️⃣ Don’t Overmix the Batter: Mix until just combined to avoid a dense texture. Overmixing can result in a tougher, less fluffy cake.
