Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 3–4 ripe peaches, sliced
- 1/4 cup brown sugar (for topping)
- 1/2 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, cream the butter and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Mix in sour cream until smooth. Gradually add the dry ingredients, stirring until just combined.
- Gently fold in half of the peach slices into the batter.
- Pour the batter into the prepared pan and arrange the remaining peach slices on top.
- Sprinkle with brown sugar and cinnamon for a golden, caramelized finish.
- Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool before serving.
