Description

Soft homemade cinnamon rolls filled with peach jam, cinnamon sugar, fresh peaches, crumb topping, and cream cheese glaze.


Ingredients

  • 1 1/2 cups fresh ripe peaches
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 2 teaspoons cornstarch
  • 1 tablespoon water
  • 1/2 cup thinly sliced peaches
  • 2/3 cup water
  • 1/4 cup bread flour
  • 3 2/3 cups bread flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon sea salt
  • 1/3 cup whole milk
  • 1/3 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter
  • 1/2 cup unsalted butter
  • 2/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon cinnamon
  • 3 tablespoons melted butter
  • 4 tablespoons unsalted butter
  • 2 ounces cream cheese
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream

Instructions

  1. Cook peaches, sugar, and lemon juice for 12-15 minutes.
  2. Add cornstarch slurry and cook 2 minutes more. Cool completely.
  3. Cook tangzhong ingredients until thick paste forms.
  4. Mix dough ingredients except butter and knead 2 minutes.
  5. Add butter gradually and knead until smooth and elastic.
  6. Rest dough for 30 minutes.
  7. Mix brown sugar filling ingredients.
  8. Roll dough into 15×21 inch rectangle.
  9. Spread filling, peach jam, and sliced peaches.
  10. Cut into 12 strips and roll.
  11. Place in lined 9×13 pan and rise until doubled.
  12. Mix crumb topping and sprinkle over rolls.
  13. Bake at 325F for 30-40 minutes until golden.
  14. Whisk glaze ingredients together.
  15. Spread glaze over warm rolls and serve.

Notes

  1. Use very thin peach slices for easy rolling.
  2. Measure flour accurately using a scale when possible.
  3. Drain canned peaches thoroughly before using.
  4. Store leftovers in an airtight container for 3-5 days.
