Description

Soft Peach Cobbler Cookies filled with juicy peaches, warm cinnamon, and buttery streusel topping. Perfect for summer gatherings and homemade dessert lovers.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup salted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla essence
  • 1 cup fresh peaches, peeled and diced
  • 1 tablespoon cornstarch
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 cup cold butter, cubed

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.
  2. Peel, dice, and pat dry the fresh peaches.
  3. Whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Cream softened butter with brown sugar and granulated sugar until fluffy.
  5. Mix in egg and vanilla essence.
  6. Fold dry ingredients into the wet mixture until combined.
  7. Stir in diced peaches gently.
  8. Prepare streusel topping by mixing flour, brown sugar, cinnamon, and cold butter until crumbly.
  9. Scoop cookie dough onto baking sheets.
  10. Top each cookie with streusel topping.
  11. Bake for 12 to 14 minutes until edges turn lightly golden.
  12. Cool cookies on baking sheet before transferring to wire rack.

Notes

  1. Dry peaches well before mixing into dough to prevent spreading.
  2. Chill dough for at least 2 hours for thicker cookies.
  3. Do not overbake because cookies continue setting while cooling.
  4. Serve warm with vanilla ice cream for extra cobbler flavor.
