Description
Crispy fried egg rolls filled with cinnamon-spiced peaches and served with vanilla bean dipping sauce.
Ingredients

- 2 cups chopped peaches
- 1 tablespoon fresh lemon juice
- 2 tablespoons salted butter
- 1/2 cup light brown sugar
- 4 teaspoons cornstarch
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 10 egg roll wrappers
- 2 tablespoons water
- Vegetable oil for frying
- Powdered sugar
- 3/4 cup powdered sugar
- 1/2 teaspoon vanilla bean paste
- 2–3 tablespoons milk
- Pinch salt
Instructions
- Heat peaches, lemon juice, butter, brown sugar, cornstarch, and cinnamon in a saucepan
- Bring to a boil and simmer for 10 minutes until thick
- Stir in vanilla extract and cool completely
- Place filling in egg roll wrappers and seal with water
- Heat oil to 350 degrees Fahrenheit
- Fry egg rolls for 5 to 6 minutes until golden brown
- Drain on a wire rack
- Dust with powdered sugar
- Whisk sauce ingredients together
- Serve warm with dipping sauce
Notes
- Cool filling before wrapping
- Maintain oil temperature at 350 degrees Fahrenheit
- Do not overfill wrappers
- Serve immediately for best texture
