Description

Crispy fried egg rolls filled with cinnamon-spiced peaches and served with vanilla bean dipping sauce.


Ingredients

Scale
  • 2 cups chopped peaches
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons salted butter
  • 1/2 cup light brown sugar
  • 4 teaspoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 10 egg roll wrappers
  • 2 tablespoons water
  • Vegetable oil for frying
  • Powdered sugar
  • 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla bean paste
  • 23 tablespoons milk
  • Pinch salt

Instructions

  1. Heat peaches, lemon juice, butter, brown sugar, cornstarch, and cinnamon in a saucepan
  2. Bring to a boil and simmer for 10 minutes until thick
  3. Stir in vanilla extract and cool completely
  4. Place filling in egg roll wrappers and seal with water
  5. Heat oil to 350 degrees Fahrenheit
  6. Fry egg rolls for 5 to 6 minutes until golden brown
  7. Drain on a wire rack
  8. Dust with powdered sugar
  9. Whisk sauce ingredients together
  10. Serve warm with dipping sauce

Notes

  1. Cool filling before wrapping
  2. Maintain oil temperature at 350 degrees Fahrenheit
  3. Do not overfill wrappers
  4. Serve immediately for best texture
