- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 5 cups peeled, pitted, and chopped fresh peaches
- 6 tablespoons heavy cream
- 1/2 teaspoon vanilla extract, optional
Instructions
- Preheat oven to 350°F. Grease a 9×13-inch baking pan or line it with parchment paper, leaving overhang on the sides for easy lifting.
- Add 2 1/2 cups flour, 2/3 cup granulated sugar, and 1/2 teaspoon salt to a food processor. Pulse briefly until combined.
- Add the cold butter cubes and pulse until the mixture looks crumbly and resembles coarse meal. Alternatively, use a pastry cutter in a mixing bowl.
- Reserve 1 1/2 cups of the crumb mixture for the topping.
- Press the remaining crumb mixture firmly into the prepared pan to form an even crust.
- Bake the crust for about 15 minutes, until the edges turn lightly golden.
- While the crust bakes, add brown sugar to the reserved crumb mixture and toss with your fingers until larger clumps form.
- In a large bowl, mix 1 cup granulated sugar, 1/4 cup flour, cinnamon, and 1/4 teaspoon salt.
- Add the chopped peaches and toss until evenly coated.
- In a small bowl, stir together heavy cream and vanilla extract, then fold it into the peach mixture.
- Pour the peach filling evenly over the warm crust.
- Sprinkle the crumble topping evenly over the peach filling without pressing it down.
- Bake for about 45 minutes, until the juices bubble and the topping turns golden brown.
- Cool completely on a wire rack.
- Refrigerate for at least 2 hours before cutting into 20 bars.

- The peach filling should go onto a warm crust, so prepare the filling while the crust bakes.
- Use cold butter for the best crumbly texture.
- Chill the bars fully before slicing for clean squares.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Frozen peaches may be used if thawed and well drained first.
