Description

- 1 pie crust
- 4 cups sliced peaches
- 1/2 cup sugar
- 2 tablespoons lemon juice
- 3 tablespoons tapioca
- 1/2 cup brown sugar
- 3/4 cup flour
- 1/2 teaspoon nutmeg
- 1/2 teaspoon vanilla extract
- 1/2 cup cold unsalted butter
- 1/8 teaspoon salt
Instructions
- Preheat oven to 375°F.
- Roll pie dough into a 12-inch circle and place in pie plate.
- Line with parchment and pie weights and bake 15 minutes.
- Mix lemon juice and tapioca until smooth.
- Add peaches and sugar and stir.
- Fill pie shell with peach mixture.
- Combine butter and brown sugar using a pastry blender.
- Add flour, nutmeg, vanilla, and salt.
- Mix until crumbly.
- Spread crumble topping over peaches.
- Bake at 400°F for 20 minutes.
- Reduce heat to 375°F and bake 25 to 30 minutes more.
- Cool completely before serving.
Notes
- Cool pie for 3 to 4 hours before serving.
- Serve plain or with vanilla ice cream.
- Store in refrigerator up to 5 days.
