Instructions
- Whisk flour, salt, baking powder, granulated sugar, and cinnamon in a medium bowl.
- Whisk in eggs, milk, and melted butter until the batter looks thick and spoonable.
- Gently fold in diced peaches until evenly distributed.
- Heat oil in a deep fryer or deep heavy pan to 375 degrees F.
- Carefully ladle 1/4 to 1/2 cup batter into the hot oil for each fritter.
- Fry for 2 to 3 minutes, turning as needed, until puffed and golden brown.
- Remove fritters with long-handled tongs or a slotted spoon and drain on paper towels.
- Roll warm fritters in granulated sugar or drizzle with powdered sugar glaze.
- For the glaze, whisk powdered sugar with enough milk to make a smooth drizzling consistency.
