Description

These Peach Hand Pies bake in minutes with refrigerated pie crust, cinnamon peach filling, and a sweet powdered sugar glaze. They are flaky, simple, and perfect for parties, dessert trays, or quick family treats.

Ingredients

Scale
  • 2 boxes refrigerated pie crust, 14.1 ounces each
  • 1 can peach pie filling, 21 ounces
  • 1 teaspoon ground cinnamon
  • 2 1/2 cups powdered sugar
  • 1/4 cup milk
  • 1 large egg, separated

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Remove pie crusts from the package and let them come to room temperature while preparing the filling.
  3. Add peach pie filling to a shallow bowl and chop the peaches into small pieces with a fork and knife.
  4. Stir cinnamon into the peach filling until evenly combined.
  5. Unroll pie crusts and cut 4-inch circles from the dough, re-rolling scraps as needed.
  6. Place about 1 tablespoon of peach filling in the center of each dough circle.
  7. Brush the edges of each circle with egg yolk, then fold the dough in half over the filling.
  8. Pinch the edges tightly, fold the sealed edge slightly, and press with a fork to seal.
  9. Poke the top of each hand pie once with a fork to vent steam.
  10. Beat egg white until frothy, then brush it over the tops of the hand pies.
  11. Arrange hand pies 1 inch apart on the prepared baking sheet.
  12. Bake for about 15 minutes, or until golden brown.
  13. While the pies bake, whisk powdered sugar and milk until smooth.
  14. Dip warm baked hand pies into the glaze, coating each one completely.
  15. Return glazed hand pies to parchment paper and let the glaze set for 5 to 15 minutes before serving.

Notes

  1. Do not overfill the pies, or the filling may leak during baking.
  2. Chop the peaches into small pieces so the pies seal more easily.
  3. Use egg yolk or a little water around the edges to help the dough stick.
  4. Let the glaze set fully before stacking or storing the hand pies.
  5. Store in an airtight container at room temperature for up to 1 week.
  6. Freeze for up to 3 months and thaw at room temperature before serving.
