Description

Soft and chewy breakfast cookies made with oats, peaches, maple syrup, cinnamon, nutmeg, and almond extract.


Ingredients

Scale
  • 1 cup instant oats
  • 3/4 cup whole wheat flour
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp coconut oil or unsalted butter
  • 1 large egg
  • 1 tsp almond extract
  • 1/4 cup pure maple syrup
  • 6 tbsp unsweetened vanilla almond milk
  • 1/2 cup diced peaches

Instructions

  1. Whisk oats, flour, cinnamon, nutmeg, baking powder, and salt.
  2. Mix coconut oil, egg, and almond extract.
  3. Stir in maple syrup and almond milk.
  4. Add dry ingredients and mix until combined.
  5. Fold in diced peaches.
  6. Chill dough for 30 minutes.
  7. Preheat oven to 325°F.
  8. Scoop dough into 15 portions and flatten.
  9. Bake for 9 to 12 minutes.
  10. Cool on baking sheet for 10 minutes before serving.

Notes

  1. Measure oats and flour accurately.
  2. Do not overbake.
  3. Cookies taste even better after 24 hours in the refrigerator.
  4. Store refrigerated up to one week or freeze for longer storage.
