- 1 teaspoon almond extract
- 1/2 cup honey
- 1/2 cup diced peaches
Instructions
- Whisk together the oats, flour, cinnamon, baking powder, and salt in a medium bowl.
- In a separate bowl, whisk together the melted coconut oil or butter, egg, and almond extract.
- Stir honey into the wet ingredients until fully combined.
- Add the dry ingredients to the wet ingredients and stir just until incorporated.
- Fold in the diced peaches carefully.
- Chill the dough for at least 45 minutes.
- Preheat the oven to 325°F and line a baking sheet with parchment paper or a silicone baking mat.
- Drop the dough into 15 rounded scoops onto the prepared baking sheet.
- Bake for 11 to 14 minutes until the edges are set.
- Cool on the pan for 10 minutes before transferring to a wire rack.
