Description
Fresh Peach Salsa combines ripe peaches, roma tomatoes, red onion, jalapeno, cilantro, lime juice, and kosher salt for a sweet, savory, and lightly spicy summer dip.

- 4 fresh ripe peaches, peeled, pitted, and diced small
- 6 roma tomatoes, diced small
- 1/4 cup red onion, diced small
- 1 tablespoon fresh lime juice
- 1 jalapeno, seeds removed and minced
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon kosher salt
Instructions
- Add the diced peaches, roma tomatoes, red onion, lime juice, minced jalapeno, cilantro, and kosher salt to a medium mixing bowl.
- Stir gently until all ingredients are evenly combined.
- Cover the bowl and refrigerate for at least 15 minutes before serving.
- Stir once more, taste, and adjust with a small pinch of salt or extra lime juice if desired.
- Serve cold with tortilla chips, pita chips, tacos, grilled fish, chicken, pork, or rice bowls.
Notes
- For extra smoky flavor, cut the peaches in half and remove the pits before dicing.
- Preheat a grill to high heat, lightly spray the cut side of each peach with nonstick spray, and grill cut-side down until lightly charred.
- Cool the grilled peaches, dice them small, and follow the recipe as directed.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
- Do not freeze, because peaches and tomatoes lose their fresh texture after thawing.
