Ingredients

  • 200g caster sugar
  • 1 tbsp lemon juice

  2. Combine peaches and caster sugar in a blender or food processor and blend until smooth.
  3. Add lemon juice gradually and taste for balance.
  4. Transfer mixture to a covered bowl and chill for 2 hours.
  5. Churn in an ice cream maker for 20-25 minutes and freeze 2-3 hours, or freeze in a shallow dish and stir every 30 minutes for 4 hours.
  6. Let the sorbet sit at room temperature for 5 minutes before serving.
