Description

Buttery Peaches and Cream Bars made with a shortbread crust, creamy peach filling, and crumb topping.


Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups unsalted butter, chilled
  • 4 large eggs
  • 2 cups sugar
  • 1 cup sour cream
  • 3/4 cup all-purpose flour
  • Pinch of salt
  • 2 pounds peaches, pitted and thinly sliced

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking pan.
  2. Combine flour, sugar, and salt for the crust mixture.
  3. Cut in chilled butter until crumbly.
  4. Reserve 1 1/2 cups of mixture for topping.
  5. Press remaining mixture into pan and bake 12 to 15 minutes.
  6. Cool crust for 10 minutes.
  7. Whisk eggs and sugar together.
  8. Add sour cream, flour, and salt and mix until smooth.
  9. Fold in sliced peaches.
  10. Pour filling over crust.
  11. Sprinkle reserved crumb mixture on top.
  12. Bake 45 to 50 minutes until set and lightly browned.
  13. Cool for at least 1 hour.
  14. Refrigerate before slicing for best results.

Notes

  1. Leave peach skins on for easier preparation.
  2. Refrigerate before slicing for cleaner bars.
  3. Store leftovers in the refrigerator.
