Description
Buttery Peaches and Cream Bars made with a shortbread crust, creamy peach filling, and crumb topping.
Ingredients

- 3 cups all-purpose flour
- 1 1/2 cups sugar
- 1/4 teaspoon salt
- 1 1/2 cups unsalted butter, chilled
- 4 large eggs
- 2 cups sugar
- 1 cup sour cream
- 3/4 cup all-purpose flour
- Pinch of salt
- 2 pounds peaches, pitted and thinly sliced
Instructions
- Preheat oven to 350°F and grease a 9×13-inch baking pan.
- Combine flour, sugar, and salt for the crust mixture.
- Cut in chilled butter until crumbly.
- Reserve 1 1/2 cups of mixture for topping.
- Press remaining mixture into pan and bake 12 to 15 minutes.
- Cool crust for 10 minutes.
- Whisk eggs and sugar together.
- Add sour cream, flour, and salt and mix until smooth.
- Fold in sliced peaches.
- Pour filling over crust.
- Sprinkle reserved crumb mixture on top.
- Bake 45 to 50 minutes until set and lightly browned.
- Cool for at least 1 hour.
- Refrigerate before slicing for best results.

- Leave peach skins on for easier preparation.
- Refrigerate before slicing for cleaner bars.
