Description

A moist peaches and cream cake loaded with fresh peaches and a light buttery batter. Perfect for summer desserts and family gatherings.


Ingredients

Scale
  • 2/3 cup white granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/3 cup melted butter
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 6 tablespoons whole milk
  • 68 fresh peaches, chopped
  • Confectioners’ sugar for dusting

Instructions

  1. Preheat oven to 355°F and prepare an 8 or 9-inch springform pan.
  2. Peel and chop the peaches.
  3. Whisk together flour, baking powder, and salt.
  4. Beat eggs, yolk, and sugar until light and fluffy.
  5. Mix in vanilla, milk, and melted butter.
  6. Fold dry ingredients into wet ingredients.
  7. Gently fold in chopped peaches.
  8. Pour into prepared pan.
  9. Bake for 45–55 minutes until golden brown.
  10. Cool completely before removing from pan.
  11. Dust with confectioners’ sugar and serve.

Notes

  1. Use ripe but firm peaches.
  2. Cool completely before slicing.
  3. Refrigerate for cleaner slices.
  4. Serve with vanilla ice cream or whipped cream if desired.
