Ingredients
- 1 cup creamy peanut butter
- 1/4 cup unsalted butter, melted
- 2 cups powdered sugar
- 2 cups Rice Krispies cereal
- 1 cup semi-sweet chocolate chips
- 1 tbsp coconut oil or shortening (optional, for smoother coating)
Instructions
- In a large bowl, mix peanut butter and melted butter until smooth.
- Gradually add powdered sugar, stirring until a dough forms.
- Gently fold in the Rice Krispies cereal, ensuring they are evenly distributed without crushing them.
- Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Chill in the fridge for 30 minutes to firm up.
- Melt chocolate chips in a microwave-safe bowl, stirring every 30 seconds. Add coconut oil for a glossy finish, if desired.
- Dip each chilled ball into the melted chocolate using a fork, ensuring it’s fully coated. Let the excess drip off.
- Return the coated balls to the parchment-lined sheet and refrigerate until the chocolate sets, about 1 hour.
