Description

Perfect Sushi Rice Every Time is the essential base for flawless sushi rolls, poke bowls, and onigiri. Lightly seasoned with rice vinegar, sugar, and salt, this short-grain rice is fluffy yet sticky enough to hold its shape—bringing authentic Japanese flavor and texture to your homemade sushi nights.

Ingredients

Scale
  • 1 cup (200 g) sushi rice

  • 1¼ cups (300 ml) water

  • 2 Tbsp (30 ml) unseasoned rice vinegar

  • 2 tsp (8 g) granulated sugar

  • ¾ tsp (4 g) kosher salt (or ½ tsp table salt)

Instructions

  • Soak – Place rice in a bowl, cover with water, and soak 15 min.

  • Rinse – Drain through a sieve. Rinse under cold water, stirring gently, until water runs clear.

  • Cook – Combine rice and measured water in a pot. Bring to boil over medium-high heat. Lower heat, cover, and simmer 15 min.

  • Steam – Remove from heat. Lay a clean towel over the pot, replace lid, and steam 10 min.

  • Season – Mix vinegar, sugar, and salt in a small bowl. Microwave 30 sec, stir, and heat 10 sec more if sugar isn’t dissolved.

  • Cool & Fold – Spread rice on a baking sheet. Drizzle seasoning evenly. Fold gently with a spatula until coated and glossy.

  • Keep Moist – Cover with a damp towel until ready to use.

Notes

Use authentic short-grain or medium-grain Japanese rice for proper texture.

Be gentle when folding seasoning—avoid mashing grains.

Fanning is optional; skipping it won’t affect quality.

Store up to 6 hours at room temperature covered with a damp towel. Refrigeration may harden rice; bring to room temperature or steam lightly before using.
