Description

Super moist and flavorful pineapple bars with a buttery shortbread base, pineapple pecan filling, and sweet icing.


Ingredients

Scale
  • ½ cup butter, melted
  • ¼ cup sugar
  • 1 ¼ cup flour
  • 2 large eggs
  • ½ cup brown sugar
  • 1 cup crushed pineapple, drained
  • ½ cup pecans, chopped
  • 2 tablespoons flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ½ cups powdered sugar
  • ½ cup butter, softened
  • 2 tablespoons pineapple juice

Instructions

  1. Preheat oven to 350°F and prepare a 9×9 pan with parchment paper.
  2. Mix melted butter, sugar, and flour, then press into pan and bake 10-15 minutes.
  3. Combine eggs, brown sugar, pineapple, pecans, flour, baking powder, and salt.
  4. Pour filling over crust and bake 20-25 minutes until set.
  5. Cool completely.
  6. Mix powdered sugar, butter, and pineapple juice to make icing.
  7. Spread icing over cooled bars and refrigerate before slicing.

Notes

  1. Line pan with parchment for easy removal.
  2. Drain pineapple well and save juice.
  3. Cool bars completely before icing.
  4. Refrigerate to set icing.
  5. Store leftovers in refrigerator up to one week.
