Ingredients
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ¾ cup unsalted butter, softened
- ¼ tsp salt
- 1 cup crushed pineapple (fresh or canned, drained)
- 3 large eggs
- 1 cup granulated sugar
- 2 tbsp cornstarch
- 1 tsp vanilla extract
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking pan with parchment paper.
- Prepare the Crust: In a mixing bowl, combine flour, sugar, and salt. Add the softened butter and mix until crumbly. Press the mixture evenly into the bottom of the baking pan. Bake for 10 minutes or until lightly golden.
- Make the Filling: In another bowl, whisk together eggs, sugar, cornstarch, and vanilla extract until smooth. Stir in the crushed pineapple, ensuring it’s evenly distributed.
- Assemble the Bars: Pour the pineapple mixture over the pre-baked crust and spread evenly.
- Bake Again: Return the pan to the oven and bake for 25-30 minutes, or until the filling is set and the top is slightly golden.
- Cool & Slice: Allow the bars to cool completely in the pan before slicing into squares. This helps the filling firm up.
- Serve: Dust with powdered sugar for an extra touch of sweetness.
Notes
1️⃣ Drain the Pineapple Thoroughly: Excess juice from the pineapple can result in a soggy crust. Whether using fresh or canned pineapple, make sure it’s well-drained before adding it to the filling.
2️⃣ Pre-Bake the Crust: Baking the crust for 10 minutes before adding the filling ensures a firm, buttery base that won’t become mushy after baking.
3️⃣ Cool Completely Before Slicing: Let the bars cool entirely in the pan to allow the filling to set properly. This ensures clean, sharp cuts and prevents the bars from falling apart.
