Description

Sweet and savory pineapple chicken with tender rice, juicy chicken, and vibrant tropical flavor made in one pan.


Ingredients

Scale
  • 1 pound boneless skinless chicken breast
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 1/2 cup low sodium soy sauce
  • 1/3 cup pineapple juice
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • 1 1/2 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper diced
  • 1/4 cup green onions sliced

Instructions

  1. Cut chicken into bite sized pieces.
  2. Heat oil in skillet and cook chicken until browned and cooked through.
  3. Remove chicken and sauté garlic briefly.
  4. Add soy sauce pineapple juice honey and vinegar and simmer.
  5. Stir in cornstarch slurry and cook until thickened.
  6. Return chicken to skillet and add pineapple and bell pepper.
  7. Fold in cooked rice and heat through.
  8. Garnish with green onions and serve hot.

Notes

  1. Do not overcook chicken.
  2. Use day old rice for best texture.
  3. Add red pepper flakes for spice.
  4. Adjust sauce thickness with pineapple juice if needed.
