  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup coconut milk
  • 1 cup crushed pineapple (drained)
  • 1 cup shredded coconut
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the Cake Batter: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, followed by vanilla extract.
  4. Gradually add the dry ingredients, alternating with coconut milk. Begin and end with the dry mix.
  5. Fold in the crushed pineapple and shredded coconut gently until evenly mixed.
  6. Pour the batter into the prepared pans and spread evenly.
  7. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  8. Let cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.

Prepare the Frosting:

  1. In a bowl, beat cream cheese and butter until smooth.
  2. Gradually add powdered sugar, mixing until fluffy.
  3. Add vanilla extract and a pinch of salt. Mix until creamy.

Assemble the Cake:

  1. Place one cake layer on a serving plate and spread a generous layer of frosting.
  2. Add the second layer and cover the entire cake with frosting.
  3. Decorate with toasted shredded coconut and pineapple chunks.

Notes

1️⃣ Drain the Pineapple Properly: Excess juice from the crushed pineapple can make the cake batter too wet, resulting in a dense or soggy texture. Make sure to drain it well before adding it to the batter.

2️⃣ Room Temperature Ingredients: Ensure butter, eggs, and cream cheese are at room temperature. This helps achieve a smooth batter and creamy frosting, preventing lumps and uneven mixing.

3️⃣ Don’t Overmix the Batter: Once you add the flour and wet ingredients, mix just until combined. Overmixing can lead to a dense cake instead of a light, fluffy texture.
