  • 1/4 cup toasted cashews or macadamia nuts (optional)

For the Dressing:

  • 2 tablespoons olive oil

  • 1 tablespoon honey or agave syrup

  • 1 tablespoon lime juice (fresh)

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste

  • Optional: pinch of chili flakes or ground cumin


Instructions

  • Prepare pineapple: Cut the fresh pineapple into bite-sized chunks and place in a large bowl.

  • Chop and combine: Dice the bell pepper, avocado, and red onion, and add them to the bowl with pineapple. Mix in black beans (if using), herbs, and nuts.

  • Make the dressing: In a small bowl, whisk together olive oil, honey, lime juice, mustard, salt, pepper, and chili flakes (if using).

  • Toss the salad: Pour the dressing over the salad and gently toss to coat all ingredients evenly.

  • Serve: Chill for 10–15 minutes to let flavors meld, then garnish with extra herbs or lime wedges before serving.

Notes

Grill the pineapple beforehand for deeper flavor.

For a creamier twist, add crumbled feta or a dollop of Greek yogurt on top.
