Description

Pineapple Shrimp Luau is a fast grilled shrimp dinner served in pineapple halves with honey, soy, lime, garlic, ginger, and fresh cilantro.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 fresh pineapple, halved lengthwise and hollowed out
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon fresh lime juice
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon crushed red pepper flakes, optional
  • Salt, to taste
  • Black pepper, to taste
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving

Instructions

  1. Whisk olive oil, soy sauce, honey, lime juice, garlic, ginger, and red pepper flakes in a small bowl, then season with salt and pepper.
  2. Add the shrimp to a bowl or resealable bag, pour the marinade over the shrimp, coat well, and refrigerate for 10 to 15 minutes.
  3. Cut the pineapple in half lengthwise and hollow out each half, leaving a shell about 1/2 inch thick, then dice the reserved pineapple flesh.
  4. Preheat the grill to medium-high heat.
  5. Thread the shrimp onto skewers if desired, then grill for 2 to 3 minutes per side until pink and opaque.
  6. Place the pineapple halves on the grill and cook for 2 to 3 minutes until lightly caramelized with grill marks.
  7. Remove the shrimp from the skewers, toss with the diced pineapple, and stir in chopped cilantro.
  8. Spoon the shrimp and pineapple mixture into the grilled pineapple halves.
  9. Serve immediately with extra cilantro and lime wedges.

Notes

  1. Do not marinate the shrimp longer than 15 minutes.
  2. Pat the shrimp dry before marinating for better grilling.
  3. Store leftovers in an airtight container in the refrigerator for up to 2 days.
  4. Reheat gently to keep the shrimp tender.
