Instructions
- In a blender, combine the pineapple chunks, sugar, lime juice, and coconut milk.
- Blend until smooth and creamy.
- Pour the mixture into a shallow freezer-safe dish and spread it into an even layer.
- Freeze for about 1 hour.
- After 1 hour, scrape the mixture with a fork to create a fluffy texture.
- Return the dish to the freezer for another 30 minutes before serving.
- Let the sorbet stand at room temperature for a few minutes if it becomes too firm to scoop.
- Serve with fresh mint leaves if desired.
