Description

Sweet and savory pineapple stuffed peppers filled with teriyaki chicken and rice for a balanced dinner.


Ingredients

Scale
  • 4 bell peppers
  • 2 cups cooked rice
  • 2 cups cooked chicken
  • 1 cup pineapple chunks
  • 1/2 cup teriyaki sauce
  • 1/2 cup onion
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup cheese
  • 2 tbsp green onions

Instructions

  1. Preheat oven to 375F
  2. Prepare peppers by cutting tops and removing seeds
  3. Cook onion and garlic in oil
  4. Add chicken pineapple and sauce
  5. Stir in rice and seasoning
  6. Stuff peppers with mixture
  7. Bake covered for 25 minutes
  8. Add cheese and bake 10 more minutes
  9. Serve warm

Notes

  1. Do not overfill peppers
  2. Use fresh pineapple for best flavor
  3. Adjust sauce to taste
