Description

A moist pineapple zucchini bread made with shredded zucchini, crushed pineapple, applesauce, warm spices, and vanilla. This easy quick bread recipe makes two tender loaves for breakfast, snacks, or freezing.


Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon salt
  • 3 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil or canola oil
  • 3/4 cup packed light brown sugar
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 1/2 cups shredded zucchini
  • 1 can crushed unsweetened pineapple in juice, 8.5 ounces, drained

Instructions

  1. Place the oven rack in the center position and preheat the oven to 350°F. Spray two 8×4-inch loaf pans with nonstick baking spray.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, allspice, and salt until evenly combined.
  3. In a large bowl, whisk together the eggs, applesauce, oil, brown sugar, granulated sugar, and vanilla until smooth.
  4. Stir in the shredded zucchini and drained crushed pineapple.
  5. Add the dry ingredients to the wet ingredients a little at a time, stirring just until the batter looks moistened and combined. Do not overmix.
  6. Divide the batter evenly between the prepared loaf pans and smooth the tops.
  7. Bake for 50 to 60 minutes, or until the edges pull slightly from the pans and a toothpick inserted into the center comes out clean.
  8. Let the loaves cool in the pans for at least 20 minutes.
  9. Remove the loaves from the pans and transfer them to a wire rack to cool completely before slicing.

Notes

  1. Drain the pineapple well so the batter stays moist but not watery.
  2. Do not squeeze the zucchini completely dry, because it helps keep the bread tender.
  3. Store tightly wrapped at room temperature for up to 3 days.
  4. Freeze whole loaves or individual slices for up to 3 months.
