  • 2 ½ cups all-purpose flour
  • 1 cup ground pistachios
  • 1 ¾ cups granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 3 large eggs (room temperature)
  • 1 cup unsalted butter (melted and slightly cooled)
  • 1 cup milk (or plant-based alternative)
  • 2 tsp vanilla extract
  • Optional: ½ tsp almond extract

Instructions

  • Preheat Oven
    Preheat your oven to 350°F (175°C). Grease a large sheet pan and line it with parchment paper for easy removal.
  • Prepare the Batter
    In a large mixing bowl, combine the flour, ground pistachios, sugar, baking powder, and salt. In a separate bowl, whisk together eggs, melted butter, milk, vanilla extract, and almond extract (if using). Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
  • Bake the Cake
    Pour the batter evenly into the prepared pan. Smooth the top with a spatula. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool Completely
    Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack. Let it cool completely before frosting.
  • Frost and Decorate
    Spread cream cheese frosting or white chocolate buttercream evenly over the cake. Decorate with chopped pistachios, edible flowers, or a drizzle of melted chocolate.

  • Use Fresh Pistachios: Always opt for unsalted, fresh pistachios to ensure a vibrant flavor and rich green hue. Stale or salted pistachios can compromise the taste and texture of the cake.
  • Room Temperature Ingredients: For a fluffy and evenly baked cake, ensure all wet ingredients, especially eggs, are at room temperature before mixing. This helps them blend seamlessly with the dry ingredients.
