Description

Pollo Asado Marinade delivers smoky chipotle flavor with citrus juices for juicy, tender grilled chicken inspired by a Chipotle copycat recipe.


Ingredients

  • 2 lbs boneless skinless chicken thighs
  • 1 medium onion, quartered
  • 4 cloves garlic
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 2–3 chipotle peppers in adobo sauce
  • 1/4 cup fresh cilantro
  • 1 tbsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Peel and quarter the onion, then gather all ingredients
  2. Add onion, garlic, chipotle peppers, orange juice, lime juice, and spices to a blender
  3. Blend until smooth to create the marinade
  4. Place chicken in a bowl or bag and coat completely with marinade
  5. Refrigerate for at least 2 hours or overnight
  6. Preheat grill or skillet over medium-high heat
  7. Cook chicken for 5-7 minutes per side until fully cooked
  8. Let chicken rest, then slice and serve
