Description

These Brown Sugar Cinnamon Pop Tart Bars feature buttery layers, a warm cinnamon sugar filling, and a smooth glaze that brings classic breakfast pastry flavor into an easy homemade dessert bar.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 3/4 cup confectioners’ sugar
  • 2 teaspoons pure vanilla extract
  • Pinch of salt
  • 1 large egg
  • 2 1/2 cups all-purpose flour
  • 1 cup brown sugar, lightly packed
  • 1 tablespoon ground cinnamon
  • 2 tablespoons all-purpose flour
  • 3 tablespoons unsalted butter, melted
  • 1 cup confectioners’ sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 34 tablespoons heavy cream or milk
  • Pinch of salt

Instructions

  1. Preheat oven to 325°F and line an 8-inch square baking pan with parchment paper.
  2. Cream butter and brown sugar until smooth, then mix in egg, confectioners’ sugar, vanilla, and salt.
  3. Gradually add flour and mix just until a soft dough forms.
  4. Press half of the dough evenly into the prepared pan and set remaining dough aside.
  5. Mix brown sugar, cinnamon, flour, and melted butter to make the filling.
  6. Spread filling evenly over the dough layer in the pan.
  7. Place remaining dough over the filling and gently press to seal.
  8. Bake for 30–40 minutes until lightly golden and set.
  9. Cool completely before glazing.
  10. Whisk glaze ingredients until smooth, spread over bars, set, then slice and serve.

Notes

  1. Allow bars to cool completely before glazing for clean layers.
  2. For neat slices, wipe the knife between cuts.
  3. Store bars in an airtight container at room temperature for up to 3 days.
