Description

Potsticker Stir Fry combines crispy pan-seared dumplings with vibrant vegetables tossed in a savory ginger soy sauce for a quick and satisfying weeknight dinner.


Ingredients

  • 1012 frozen potstickers or gyoza (do not thaw)
  • 1/4 cup water
  • 45 white button mushrooms, sliced
  • 1 cup broccoli florets
  • 20 green beans, sliced into thirds
  • 1 large carrot, thinly sliced on a bias
  • 1/4 cup small diced onion
  • 1 tablespoon sesame oil
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup reduced-sodium soy sauce
  • 1/4 cup rice wine vinegar
  • 1 tablespoon sugar or honey
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • Sesame seeds for garnish
  • Green onions for garnish

Instructions

  1. Whisk cornstarch with cold water to create a slurry, then add soy sauce, rice wine vinegar, sugar or honey, and grated ginger and whisk until combined.
  2. Heat 1 tablespoon olive oil and sesame oil in a large skillet over medium-high heat and add frozen potstickers in a single layer.
  3. Cook potstickers for 3–4 minutes until bottoms are golden brown, add 2 tablespoons water, cover, and cook 3–4 minutes more, then remove and set aside.
  4. Add 1 tablespoon olive oil to the same skillet and cook mushrooms and diced onion for 3–4 minutes until browned, then remove and set aside.
  5. Add a small drizzle of sesame oil and cook broccoli florets for 3–4 minutes until tender-crisp, then remove and set aside.
  6. Add remaining olive oil if needed and cook green beans and carrots for 3–4 minutes until tender but still crisp.
  7. Return all cooked vegetables and potstickers to the skillet.
  8. Pour prepared sauce over the mixture and stir gently to coat evenly.
  9. Cook for 2–3 minutes until the sauce thickens and glazes everything.
  10. Transfer to a serving dish and garnish with sesame seeds and sliced green onions before serving.

Notes

  1. Do not thaw potstickers before cooking for best texture.
  2. Avoid overcrowding the skillet to maintain crisp edges.
  3. Add chili flakes or chili crisp for extra heat if desired.
  4. Serve over steamed jasmine or brown rice if preferred.
