- Preheat Oven: Set your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.
- Mix Dry Ingredients: In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Prepare Wet Ingredients: In a medium bowl, combine pumpkin purée, granulated sugar, brown sugar, oil, eggs, and vanilla. Whisk until smooth.
- Combine Mixtures: Gradually pour the wet mixture into the dry ingredients. Use a spatula to gently fold until just combined. Avoid overmixing.
- Fold in Apples: Stir in the diced apples, ensuring they’re evenly distributed.
