  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • ½ cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups diced apple (e.g., Granny Smith or Honeycrisp)

Instructions

  • Preheat Oven: Set your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.
  • Mix Dry Ingredients: In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • Prepare Wet Ingredients: In a medium bowl, combine pumpkin purée, granulated sugar, brown sugar, oil, eggs, and vanilla. Whisk until smooth.
  • Combine Mixtures: Gradually pour the wet mixture into the dry ingredients. Use a spatula to gently fold until just combined. Avoid overmixing.
  • Fold in Apples: Stir in the diced apples, ensuring they’re evenly distributed.
  • Fill Muffin Cups: Scoop batter into the prepared muffin tin, filling each cup about ¾ full.
  • Bake: Place the muffin tin in the oven and bake for 18-22 minutes. Check doneness by inserting a toothpick in the center of a muffin; it should come out clean.
  • Cool: Let muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

  • Use the Right Apples: Choose firm apples like Granny Smith or Honeycrisp to ensure they maintain their texture during baking and provide a nice balance of sweetness and tartness.
