Description
Moist, warmly spiced Pumpkin Bread made with canned pumpkin, butter, cinnamon, cloves, and nutmeg. This easy recipe makes two tender loaves perfect for breakfast, snacks, gifting, or freezing.

- 2 cups all-purpose flour, spooned into the measuring cup and leveled off
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 3/4 cup unsalted butter, softened
- 2 cups granulated sugar
- 2 large eggs
- 1 can 100% pure pumpkin, 15 ounces
Instructions
- Preheat the oven to 325°F and place an oven rack in the middle position.
- Generously grease two 8 x 4-inch loaf pans with butter and dust them with flour, or use baking spray with flour.
- In a medium bowl, whisk together the flour, salt, baking soda, baking powder, cloves, cinnamon, and nutmeg until well combined.
- In a large bowl with an electric mixer, beat the softened butter and sugar on medium speed until just blended.
- Add the eggs one at a time, beating well after each addition.
- Continue beating for a few minutes until the mixture looks light and fluffy.
- Beat in the pumpkin. The mixture may look slightly grainy or curdled, and that is normal.
- Add the flour mixture and mix on low speed just until combined.
- Divide the batter evenly between the prepared loaf pans and smooth the tops.
- Bake for 65 to 75 minutes, or until a cake tester inserted into the center comes out clean.
- Let the loaves cool in the pans for about 10 minutes.
- Turn the loaves out onto a wire rack and cool completely before slicing.
Notes
- Fresh from the oven, the loaves have a crisp crust and tender center.
- Toast individual slices the next day to bring back the fresh-baked texture.
- The bread can be frozen for up to 3 months.
- To freeze, cool completely, wrap securely in foil or freezer wrap, and place in a freezer bag.
- Thaw overnight in the refrigerator before serving.
