Description

Pumpkin Cobbler is a warm, spiced fall dessert with a fluffy pumpkin cake top and a self-made caramel sauce base. Baked in one dish and loaded with pumpkin purée and cosy spices, this comforting pumpkin bake is perfect for sharing, scooping, and savouring all autumn long.

For the cobbler:

  • 1¼ cups all-purpose flour

  • 2 tsp baking powder

  • ¼ tsp salt

  • ¾ cup granulated sugar

  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ¼ tsp ground cloves

  • ¼ tsp ground ginger

  • 1 cup canned pumpkin purée

  • ¼ cup vegetable oil

  • 1 tsp vanilla extract

For the topping:

  • 1 cup brown sugar

  • ½ tsp ground cinnamon

  • 1½ cups hot water


Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  • In a large bowl, whisk together flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, cloves, and ginger.

  • Add pumpkin purée, vegetable oil, and vanilla. Stir until a thick batter forms.

  • Spread batter evenly in the prepared dish.

  • In a small bowl, mix brown sugar and cinnamon. Sprinkle evenly over the batter — do not stir.

  • Gently pour hot water over the top. Do not stir.

  • Bake uncovered for 50–55 minutes, until the top is golden and the caramel layer is bubbling underneath.

  • Let cool for 5–10 minutes. Serve warm with vanilla ice cream or whipped cream.

Notes

Do not stir the sugar topping or water into the batter — this creates the caramel sauce.

Dark brown sugar adds a deeper molasses flavor.

Add-ins like chopped pecans or a splash of bourbon can enhance the richness.

Best served warm and fresh for gooey texture.
