Instructions
Make the Dough:
In a medium bowl, whisk together the flour, baking powder, salt, and pumpkin pie spice.
In a large bowl, cream the softened butter and sugar until light and fluffy.
Add pumpkin puree, egg, and vanilla extract. Mix until just combined.
Gradually incorporate the dry ingredients until a soft dough forms.
Chill:
Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
Shape and Bake:
Preheat oven to 350°F (175°C).
On a floured surface, roll out the dough to ¼-inch thickness.
Use cookie cutters to shape the dough and place on parchment-lined baking sheets.
Bake for 10–12 minutes until edges are lightly golden.
Let cookies cool on the sheet for 5 minutes before transferring to a wire rack.
Decorate (Optional):
Once fully cooled, decorate with royal icing using piping bags.
Allow icing to set fully before storing or serving.
Notes
Chill the dough well to ensure clean cuts and less spreading.
For deeper flavor, use brown butter instead of regular butter.
You can substitute pumpkin pie spice with 1 tsp cinnamon + ¼ tsp each of nutmeg, ginger, and cloves.
Cookies can be frozen undecorated for up to 3 months.
