Description

Chewy, gooey Pumpkin Spice Magic Cookie Bars layer a buttery graham cracker crust with creamy spiced pumpkin, coconut, walnuts, chocolate chips, and pumpkin spice morsels.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 14-ounce can sweetened condensed milk
  • 1/3 cup pumpkin puree
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1 cup sweetened flaked coconut
  • 1 cup chopped walnuts
  • 1 cup semisweet chocolate chips
  • 1 cup pumpkin spice morsels

Instructions

  1. Preheat the oven to 350°F. Grease a 9-by-13-inch baking pan, or line it with foil and coat the foil lightly with nonstick cooking spray.
  2. Melt the butter in a small saucepan or microwave-safe bowl.
  3. Stir the graham cracker crumbs into the melted butter until evenly moistened.
  4. Press the crumb mixture firmly and evenly into the bottom of the prepared baking pan.
  5. Whisk the sweetened condensed milk, pumpkin puree, cinnamon, nutmeg, and allspice in a medium bowl until smooth.
  6. Pour the pumpkin mixture evenly over the graham cracker crust.
  7. Sprinkle the coconut, walnuts, chocolate chips, and pumpkin spice morsels evenly over the pumpkin layer.
  8. Press the toppings gently into the pumpkin mixture with clean hands or a flat spatula.
  9. Bake for 25 minutes, or until the edges look set and the coconut turns light golden brown.
  10. Place the pan on a wire rack and cool the bars completely before slicing into 16 squares.

Notes

  1. Use pure pumpkin puree rather than sweetened pumpkin pie filling.
  2. Press the graham cracker crust firmly so the cooled bars hold together.
  3. Toast the walnuts for five to seven minutes for deeper flavor.
  4. Let the bars cool completely before slicing.
  5. Store leftovers in an airtight container in the refrigerator for up to five days.
  6. Freeze individually wrapped bars for up to two months.
