Description
Festive quick cranberry meatballs perfect for Christmas parties, coated in a tangy-sweet cranberry glaze.
Ingredients
1 lb ground pork (90–95% lean)
1/2 cup panko breadcrumbs
1 egg
2 tbsp chopped parsley
2 tbsp lemon juice
1 cup cranberry sauce
2 tbsp brown sugar
Salt and pepper to taste
Instructions
1. Preheat oven to 400°F (200°C).
2. Combine pork, breadcrumbs, egg, parsley, salt, and pepper in a bowl.
3. Roll mixture into bite-sized meatballs and arrange on a lined baking sheet.
4. Bake 20–25 minutes until golden and cooked through.
5. In a saucepan, combine cranberry sauce, brown sugar, and lemon juice; simmer 5 minutes.
6. Add cooked meatballs to the sauce and toss to coat.
7. Serve warm with parsley garnish.
