Quick cottage cheese buns are soft, fluffy, and perfect for a fast meal. These buns are easy to make, full of protein, and don’t require yeast or long proofing. With a mild cheesy flavor and slight crispiness on the outside, they make a great breakfast, snack, or dinner side dish. They’re quick to prepare, light on the stomach, and versatile enough for both sweet and savory fillings.
Ingredients
1 cup cottage cheese (small curd, full-fat recommended)
1 egg
2 cups all-purpose flour (or a mix of all-purpose and whole wheat flour)
1 tablespoon baking powder
1/2 teaspoon salt
1–2 tablespoons honey or sugar (optional for sweetness)
1 teaspoon vanilla or cinnamon (optional for flavor)
1 tablespoon butter or oil for greasing (optional)
1 egg for egg wash (optional for golden finish)
Instructions
Preheat the oven to 375°F (190°C).
In a large bowl, combine the cottage cheese and egg. Stir until smooth. If you’re adding honey or vanilla, mix them in at this stage.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, stirring gently until combined.
Scoop the dough into small balls and place them on a lined baking tray, leaving space between each one.
If desired, brush the tops with a beaten egg for a golden finish.
Bake for 20-25 minutes until the tops are golden and the buns sound hollow when tapped on the bottom.
Let them cool on a wire rack before serving.
Notes
These buns can be made ahead of time and stored for later. They freeze well for up to 2 months.
You can add herbs or spices for savory buns, or sweeten them with fruit or chocolate chips for a dessert option.
If using gluten-free flour, add more moisture to achieve the right dough consistency.
