Description

  • 3 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 tsp salt
  • ¾ cup milk (warm)
  • 2 large eggs
  • ¼ cup unsalted butter (melted)
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries (mashed)
  • ½ cup pistachios (chopped)
  • 1 egg (beaten, for egg wash)
  • Powdered sugar (optional, for garnish)

Instructions

  • Prepare the Dough: Combine flour, sugar, yeast, and salt in a large bowl. Gradually add warm milk, eggs, melted butter, and vanilla extract. Mix until a dough forms. Knead on a floured surface for 8–10 minutes until smooth. Cover and let rise for 1 hour or until doubled in size.
  • Make the Filling: Mash the fresh raspberries into a paste. Mix in the chopped pistachios evenly.
  • Shape the Wreath: Roll out the dough into a rectangle (approx. 12″x16″). Spread the raspberry-pistachio filling evenly, leaving a 1-inch border. Roll the dough tightly from the longer edge, forming a log.
  • Form the Wreath: Cut the log lengthwise, exposing the filling. Twist the halves together with the cut sides up. Shape the twisted dough into a circle, pinching the ends to seal.
  • Bake: Preheat the oven to 350°F (175°C). Place the wreath on a parchment-lined baking sheet. Brush with egg wash and bake for 25–30 minutes until golden brown.
  • Cool & Decorate: Let the wreath cool on a wire rack. Dust with powdered sugar or drizzle with a simple glaze if desired.

Notes

  • Proper Dough Sealing: When shaping the wreath, ensure the dough edges are tightly sealed after rolling and twisting. This helps prevent the filling from leaking during baking, keeping the wreath neat and flavorful.
  • Room Temperature Ingredients: Use room-temperature eggs and warm (not hot) milk to activate the yeast effectively and ensure the dough rises properly. Hot milk can kill the yeast, while cold ingredients can slow the process.
