Ingredients
1 tbsp olive oil
1/2 yellow onion, diced
6 cloves garlic, minced
1 lb Italian sausage
1 tbsp Italian seasoning
2 tbsp tomato paste
4 cups chicken broth
1 can (28 oz) crushed tomatoes
18 oz refrigerated cheese or spinach ravioli
2 cups fresh spinach, chopped
1 cup heavy cream
Kosher salt and freshly cracked black pepper, to taste
For Garnish:
Shaved Parmesan cheese
Fresh parsley, chopped
Instructions
Sauté Aromatics: Heat olive oil in a large pot over medium-high heat. Add diced onion, season with salt and pepper, and sauté for 3–4 minutes until softened.
Add Garlic & Tomato Paste: Stir in garlic and Italian seasoning; cook for 30 seconds. Add tomato paste and cook for another minute to enhance flavor.
Brown Sausage: Add Italian sausage, breaking it apart. Cook until browned and fully cooked.
Build Broth: Stir in chicken broth and crushed tomatoes. Add ravioli directly to the pot. Season with salt and pepper.
Simmer Ravioli: Bring to a gentle simmer and cook for 3–5 minutes until ravioli are tender.
Add Cream & Spinach: Stir in spinach and heavy cream. Simmer gently until spinach wilts.
Taste & Serve: Adjust seasoning if needed. Ladle into bowls and garnish with Parmesan and parsley.
