Description

Creamy Sausage Ravioli Soup is a hearty, one-pot comfort food loaded with Italian sausage, cheese-stuffed ravioli, fresh spinach, and a rich tomato broth. This easy, weeknight-friendly recipe is perfect for chilly evenings when you need a cozy, satisfying meal with minimal cleanup.


Ingredients

  • 1 tbsp olive oil

  • 1/2 yellow onion, diced

  • 6 cloves garlic, minced

  • 1 lb Italian sausage

  • 1 tbsp Italian seasoning

  • 2 tbsp tomato paste

  • 4 cups chicken broth

  • 1 can (28 oz) crushed tomatoes

  • 18 oz refrigerated cheese or spinach ravioli

  • 2 cups fresh spinach, chopped

  • 1 cup heavy cream

  • Kosher salt and freshly cracked black pepper, to taste

For Garnish:

  • Shaved Parmesan cheese

  • Fresh parsley, chopped


Instructions

  • Sauté Aromatics: Heat olive oil in a large pot over medium-high heat. Add diced onion, season with salt and pepper, and sauté for 3–4 minutes until softened.

  • Add Garlic & Tomato Paste: Stir in garlic and Italian seasoning; cook for 30 seconds. Add tomato paste and cook for another minute to enhance flavor.

  • Brown Sausage: Add Italian sausage, breaking it apart. Cook until browned and fully cooked.

  • Build Broth: Stir in chicken broth and crushed tomatoes. Add ravioli directly to the pot. Season with salt and pepper.

  • Simmer Ravioli: Bring to a gentle simmer and cook for 3–5 minutes until ravioli are tender.

  • Add Cream & Spinach: Stir in spinach and heavy cream. Simmer gently until spinach wilts.

  • Taste & Serve: Adjust seasoning if needed. Ladle into bowls and garnish with Parmesan and parsley.

Notes

Watch ravioli closely to avoid overcooking.

Swap Italian sausage with turkey sausage or plant-based alternatives.

Kale or Swiss chard can be used instead of spinach.

Adjust cream quantity for desired richness.

Freeze broth base without ravioli for best texture.
