For the Cream Cheese Yogurt Filling:

  • 4 oz cream cheese, softened
  • 1/2 cup Greek yogurt
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

1️⃣ Prepare the Crêpe Batter: In a mixing bowl, whisk together flour, cocoa powder, sugar, and salt. In another bowl, beat the eggs, then add milk, melted butter, vanilla, and a few drops of red food coloring. Slowly pour the wet ingredients into the dry, whisking until smooth. Let the batter rest for 15 minutes.

2️⃣ Cook the Crêpes: Heat a non-stick pan over medium heat and lightly grease with butter. Pour about 1/4 cup of batter into the pan, swirling to spread evenly. Cook for 1-2 minutes until the edges lift, then flip and cook for another 30 seconds. Repeat with the remaining batter.

3️⃣ Make the Filling: In a bowl, beat the cream cheese until smooth. Add Greek yogurt, powdered sugar, and vanilla, mixing until creamy.

4️⃣ Assemble the Crêpes: Spread a thin layer of filling on each crêpe, then fold or roll them up.
