Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup creamy peanut butter
- 3/4 cup granulated sugar
- 3/4 cup brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 1/2 cups Reese’s Pieces or chopped Reese’s Peanut Butter Cups
Instructions
- Preheat Oven: Heat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
- Cream Butter and Sugars: Beat softened butter, peanut butter, granulated sugar, and brown sugar until fluffy.
- Mix Wet Ingredients: Add eggs and vanilla extract. Mix until smooth.
- Combine Dry Ingredients: In another bowl, whisk together flour, baking soda, salt, and pudding mix. Gradually add to wet ingredients, mixing until just combined.
- Add Mix-Ins: Gently fold in Reese’s Pieces or chopped Peanut Butter Cups.
- Shape Dough: Scoop dough into 1–1.5 inch balls and place on prepared baking sheets, spacing 2 inches apart.
- Bake: Bake for 10–12 minutes, until edges are lightly golden. Centers should look set but soft.
- Cool: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Don’t Skip the Pudding Mix: The instant vanilla pudding mix is the secret ingredient that makes these cookies incredibly soft and chewy. Substituting it may alter the texture and flavor.
- Avoid Overbaking: The cookies should look slightly underbaked in the center when you take them out of the oven. They will continue to firm up as they cool, ensuring the perfect soft and chewy texture.
- Chill the Dough for Best Results: While not mandatory, chilling the dough for 30 minutes can prevent spreading and give the cookies a better shape and texture during baking.
