Description

Creamy Southern-style chicken salad made with poached chicken breasts, eggs, celery, relish, and mayonnaise, perfect for sandwiches or light lunches.

Ingredients

Scale
  • 2 pounds boneless skinless chicken breasts
  • 4 cups lemon-lime soda
  • 1 teaspoon salt
  • 2 hard-boiled eggs, peeled
  • 2 celery ribs, finely chopped
  • 1/4 cup finely chopped onion
  • 1/3 cup sweet pickle relish
  • 3/4 cup mayonnaise
  • 1/4 teaspoon black pepper

Instructions

  1. Place chicken breasts in a deep skillet and sprinkle with salt
  2. Pour lemon-lime soda over chicken to fully cover
  3. Bring liquid to a gentle boil, cover, and reduce to a simmer
  4. Cook until chicken reaches 165°F internally
  5. Remove chicken and let cool completely
  6. Add cooled chicken to a food processor and pulse until finely chopped
  7. Chop eggs and add to chicken
  8. Stir in celery, onion, relish, mayonnaise, and black pepper
  9. Mix until smooth and well combined
  10. Cover and refrigerate for at least 1 hour before serving

Notes
