- 1 (28-ounce) can whole tomatoes with juice
- 2 (10-ounce) cans diced tomatoes with green chilies
- 1/4 cup chopped onion
- 1 whole jalapeño, quartered and sliced thin
- 1 clove garlic, minced
- 1/4 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- Juice of 1/2 lime
- 1/2 cup cilantro, plus more to taste
- Tortilla chips or cheese nachos for serving
Instructions
- Add the whole tomatoes with juice to a food processor.
- Add diced tomatoes with green chilies, onion, jalapeño, garlic, sugar, salt, cumin, lime juice, and cilantro.
- Pulse 10 to 15 times until the salsa reaches the desired consistency.
- Taste with a tortilla chip and adjust seasoning if needed.
- Transfer to a container and refrigerate for at least 1 hour.
- Serve chilled with tortilla chips or cheese nachos.
Notes
- Use a 12-cup food processor for the best results.
- Process in batches if your food processor is smaller.
- Refrigerating the salsa improves the flavor.
