Description

This easy Rhubarb Impossible Pie creates its own crust while baking and delivers a sweet custard with tart rhubarb flavor.


Ingredients

Scale
  • 3 cups rhubarb chopped
  • 3 eggs
  • 1/2 cup Bisquick
  • 3 tablespoons melted butter
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 1/4 cups sugar
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 2 tablespoons butter cold
  • 1/2 cup Bisquick
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup walnuts chopped

Instructions

  1. Preheat oven to 375°F and grease a pie plate
  2. Spread rhubarb evenly in the dish
  3. Blend eggs, Bisquick, butter, salt, spices, sugar, vanilla, and milk
  4. Pour mixture over rhubarb
  5. Prepare streusel topping and sprinkle on top
  6. Bake 45 to 55 minutes until set
