Instructions
- Preheat oven to 325°F and grease two loaf pans
- Whisk brown sugar, oil, egg, buttermilk, and vanilla until smooth
- Combine flour, baking soda, and salt in a separate bowl
- Mix dry ingredients into wet ingredients until just combined
- Fold in diced rhubarb and walnuts
- Divide batter evenly into prepared pans
- Mix sugar and cinnamon and sprinkle on top
- Bake for 55 to 60 minutes until a toothpick comes out clean
- Cool in pans for 10 minutes then transfer to a wire rack to cool completely
