Description

A soft and chewy rhubarb Turkish delight with a balanced sweet-tart flavor and a subtle floral hint from optional rose water.


Ingredients

Scale
  • 2 cups rhubarb, chopped
  • 1 1/2 cups water
  • 2 cups granulated sugar
  • 1/2 cup cornstarch
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon lemon juice
  • 1/2 teaspoon rose water (optional)
  • Powdered sugar for dusting

Instructions

  1. Combine chopped rhubarb and water in a saucepan and cook until soft
  2. Strain the mixture and extract all liquid, discarding solids
  3. Return liquid to saucepan and add sugar, cornstarch, cream of tartar, and lemon juice
  4. Cook over medium heat while stirring constantly until thick and glossy
  5. Remove from heat and stir in rose water if using
  6. Pour mixture into a greased 8×8-inch dish and spread evenly
  7. Allow to cool completely and set overnight
  8. Cut into squares and coat each piece with powdered sugar

Notes

  1. Stir constantly to prevent lumps
  2. Use fresh rhubarb for best color and flavor
