Description
A soft and chewy rhubarb Turkish delight with a balanced sweet-tart flavor and a subtle floral hint from optional rose water.
Ingredients

- 2 cups rhubarb, chopped
- 1 1/2 cups water
- 2 cups granulated sugar
- 1/2 cup cornstarch
- 1/2 teaspoon cream of tartar
- 1 teaspoon lemon juice
- 1/2 teaspoon rose water (optional)
- Powdered sugar for dusting
Instructions
- Combine chopped rhubarb and water in a saucepan and cook until soft
- Strain the mixture and extract all liquid, discarding solids
- Return liquid to saucepan and add sugar, cornstarch, cream of tartar, and lemon juice
- Cook over medium heat while stirring constantly until thick and glossy
- Remove from heat and stir in rose water if using
- Pour mixture into a greased 8×8-inch dish and spread evenly
- Allow to cool completely and set overnight
- Cut into squares and coat each piece with powdered sugar
Notes
- Stir constantly to prevent lumps
- Use fresh rhubarb for best color and flavor
