Ingredients

- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1/2 cup vegetable oil
- 1 1/2 cups granulated sugar
- 2 teaspoons vanilla extract
- 2 cups shredded zucchini
- 3–5 tablespoons water
- 1/2 cup chopped walnuts optional
- 3 tablespoons cocoa powder
- 1/4 cup melted butter
- 2 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
- Pinch salt
Instructions
- Preheat oven to 350°F and prepare a 9×13-inch pan.
- Whisk flour, cocoa powder, baking soda, and salt.
- Mix oil, sugar, and vanilla until combined.
- Add dry ingredients and fold in zucchini.
- Rest batter several minutes.
- Add water gradually until thick but spreadable.
- Fold in walnuts if using.
- Spread batter in pan.
- Bake 25 to 30 minutes.
- Cool completely.
- Whisk frosting ingredients until smooth.
- Spread frosting over brownies.
- Cut into 24 squares and serve.
Notes
- Do not add too much water.
- The batter should be thick, not runny.
- Store in an airtight container.
- Chill for a denser texture.
