Description

Rich and fudgy zucchini brownies topped with a gooey chocolate frosting.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 1/2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups shredded zucchini
  • 35 tablespoons water
  • 1/2 cup chopped walnuts optional
  • 3 tablespoons cocoa powder
  • 1/4 cup melted butter
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Pinch salt

Instructions

  1. Preheat oven to 350°F and prepare a 9×13-inch pan.
  2. Whisk flour, cocoa powder, baking soda, and salt.
  3. Mix oil, sugar, and vanilla until combined.
  4. Add dry ingredients and fold in zucchini.
  5. Rest batter several minutes.
  6. Add water gradually until thick but spreadable.
  7. Fold in walnuts if using.
  8. Spread batter in pan.
  9. Bake 25 to 30 minutes.
  10. Cool completely.
  11. Whisk frosting ingredients until smooth.
  12. Spread frosting over brownies.
  13. Cut into 24 squares and serve.

Notes

  1. Do not add too much water.
  2. The batter should be thick, not runny.
  3. Store in an airtight container.
  4. Chill for a denser texture.
