Roasted Garlic Mashed Potatoes are the ultimate creamy comfort food, infused with sweet, mellow roasted garlic and rich butter. Ingredients
1 head garlic
1 tsp olive oil
2 lbs red potatoes, quartered
6 tbsp butter
3/4 cup half-and-half
Kosher salt and black pepper, to taste
Instructions
Preheat oven to 375°F. Slice the top 1/4 inch off the garlic head.
Drizzle exposed cloves with olive oil, wrap in foil, and roast for 1 hour until golden and soft. Cool slightly and squeeze out garlic cloves.
Place potatoes in a large pot, cover with cold water, and add 1 tsp salt. Bring to a boil, then simmer for 15 minutes or until fork-tender.
Drain potatoes and return to the pot. Add roasted garlic.
Warm butter and half-and-half together until butter is melted. Pour over potatoes.
Mash until creamy with a little texture. Season with salt and pepper.
Garnish with extra butter or herbs if desired.
Notes
Warmed butter and cream mix in more smoothly than cold.
Use a masher for rustic texture or a hand mixer for smooth consistency.
Leave the potato skins for color and texture or peel if preferred.
Great make-ahead side dish—just reheat with a splash of cream.
